It's time to spill the beans! Green beans may look unassuming, but they're one of the best sources of protein in the plant kingdom. They're an excellent vegetable with plenty of omega 3, and vitamin A — a powerful antioxidant. They also have good levels of vitamin K that promotes strong bones and are high in fibre.

Green beans used to be called string beans because of the string that ran along the outer side of the pod. By 1894, botanists successfully removed the string through selective breeding. Green beans grow very fast, and vines can be ten feet tall, which is perhaps where the story of Jack and the Beanstalk comes from.
